Spanish fish stew

This is really easy to make and full of protein and healthy fats.


INGREDIENTS -serves 2

Fish pie mix - I purchased this from my local fish monger x 2 scoops

Fresh mussels- 2x handfuls ( make sure that they close up if any don't disgard them)

Onion - 1 x medium

Garlic - 2 x cloves

Smoked paprika - 2 x tsp or to desired taste

Passata -1 x carton

New potatoes - 10 small

Fresh parsley

Salt and pepper

Squeeze of lemon


METHOD

Cook the new potatoes

Fry the chopped onion and garlic in a little oil or oil spray until soft

Add the paprika and cook off quickly being careful not to burn it

Add the passata, salt and pepper to taste and heat, then add the fish and mussels and simmer gently until thoroughly cooked the mussels should open up if any don't throw them away.

Add the cooked and sliced new potatoes and fresh chopped parsley

Serve wih a squeeze of lemon.
