Quick and easy pea and mint soup


This is such a quick, cheap and easy soup and its tastes divine.


INGREDIENTS

350g bag of frozen peas

Bunch of spring onions

2 x garlic cloves

Bunch of fresh mint

Vegetable stock 850ml I use Kallo gluten free stock cube x 1

Salt and pepper

Lime

Creme fraiche -I used oatley for a plant based version -1-2 TBSP

Garlic croutons ( homemade) if you like


METHOD

Fry the garlic and onion in a little oil or oil spray until soft

Add the stock and mint with the peas and simmer until cooked

Zap with a blender until smooth, add the creme fraiche and squeeze of lime

Top with the toasted garlic croutons and serve.
